Hurray for Preschool!!!

Krispie Kremes!!!

Today I took my little preschool group on a field trip to Krispie kremes! McKena, Jessica, and Nick all had a great time. While in the car we had a reminder talk on how we needed to use our manners. This was when Nick politely reminded me that I shouldn't say CRAP because it's not a nice word :O) I think they were worried I would embarrass them!
Once inside they loved was the icing waterfall and watching the donut conveyor belt. I think that they could have watched for hours, but we had donuts to eat. Jess and McKena pick the donuts with "sparklers" (which they both picked off) and Nick chose the chocolate glazed. I really think it was a hit! Sorry you couldn't make it Eli we missed your stinkin cute face!!!

Taste of Tuesday!

TASTE OF TUESDAY!!!

On Tuesday's I will share some of my most favorite recipes. Mostly because I love getting new ideas and sharing things that I tried and think are yummy. For our book club we did a Paula Dean cookbook and when we got together we all brought something we made from one of her recipes. I have to be honest although she cracks me up with her southern twang I did not like one thing that people brought, including myself. So I went back and looked up a couple of recipes and tried them and this is what I found. The most amazing Red Velvet Cupcake with Cream Cheese Frosting! I cannot tell a lie I ate 4 on the first day! (Probably not the best idea since I have to weigh in and record my weight once a month.) Here's the recipe:

2 1/2 cups flour
1 1/2 cups sugar
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cocoa powder
1 1/2 cups veggie oil
1 cup buttermilk, room temperature
2 large eggs, room temperature
2 tablespoons red food coloring
1 teaspoon white distilled vinegar
1 teaspoon vanilla extract

Frosting:
1 pound cream cheese, softened
2 sticks butter, softened
1 teaspoon vanilla extract
4 cups of powder sugar

Instructions - In a medium mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder. In a large bowl gently beat together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla. Then combine the wet and dry ingredients and mix until smooth. Divide batter into cupcake tins and bake on 350 degrees for about 20 to22 minutes. Turning the pan once half way through. Test the cupcakes with toothpick to see if they are done. Remove and cool completely before frosting.( makes 24 cupcakes) For the frosting beat the cream cheese, butter and vanilla together until smooth. Then add the sugar slowly. Beat until light and fluffy.

* I only made 1/2 the frosting and still had plenty left over. I just put it in the fridge and used it for other things! I hope you love it!

M.L.K. DAY!!!
EVERYONE IS HOME TODAY!!!
Since this was a day off from school we decided to spend time the whole day as a family. First we went to Chili's for some yummy lunch and then off to miniature golf. The kids had a super great time golfing. Abbie and Preston each got a hole in one. They thought they were pretty awesome. McKena had the funniest swing I have ever seen. When ever it was her turn to hit the ball she would set it down walk around it one time and swing has hard has she could like a hockey player. She did have some trouble with her pants. We all had some good laughs at the butt crack. Can we say SHADE!!!

ULTRASOUND

Today was the day for our ultrasound! It was really fun to be able to see what the baby is doing. Today she had the hiccups and was crossing her legs at the ankles. I know you are all sighing right about now but you'll have to hang in there with me. I'm hormonal! Seriously everything looked great and we are all on schedule for a May baby!!!
